Ingredients:
4 boneless, skinless chicken breasts
Salt and black pepper, to taste
2 tbsp olive oil, divided
1 small onion, finely chopped
2 cloves garlic, minced
4 cups fresh spinach, roughly chopped
1/2 cup crumbled feta cheese
1/4 cup grated Parmesan cheese
1/4 tsp red pepper flakes (optional)
1 tsp dried oregano
Toothpicks, for securing chicken
Instructions:
Preheat the oven to 375°F (190°C).
Place the chicken breasts on a cutting board and season both sides with salt and black pepper. Using a sharp knife, carefully create a horizontal pocket in each chicken breast, making sure not to cut all the way through.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes, or until softened. Add the minced garlic and cook for an additional 30 seconds, or until fragrant.
Add the chopped spinach to the skillet and cook for 3-4 minutes, or until wilted. Remove the skillet from the heat and allow the spinach mixture to cool slightly.
In a medium-sized bowl, combine the wilted spinach mixture, crumbled feta cheese, grated Parmesan cheese, red pepper flakes (if using), and dried oregano. Mix well.
Stuff each chicken breast pocket with the spinach and feta mixture, dividing it evenly among the four breasts. Use toothpicks to secure the openings.
In an oven-safe skillet or baking dish, heat the remaining 1 tablespoon of olive oil over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side, or until golden brown.
Transfer the skillet or baking dish to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove the Spinach & Feta Stuffed Chicken Breast from the oven, and allow it to rest for 5 minutes before removing the toothpicks and serving.
